Oven-Fried Catfish

« Substitute pan-fried catfish with this combo of cornmeal and a
whole lot of spices. It gives rich flavors in half an hour. »

• 1 1/2 lbs. catfish fillets
• 1/2 cup yellow cornmeal
• 1 tsp. paprika
• 1 tsp. dried thyme
• 1 tsp. salt
• 1/2 tsp. celery seed
• 1/2 tsp. onion powder
• 1/2 tsp. garlic powder
• 1/2 tsp. ground black pepper
• 1/2 cup skim milk
• cooking spray


• Set the oven for preheating to 220 degrees C (425 degrees F). Place
aluminum foil on a lined baking sheet and spray with cooking spray.
• In a shallow bowl, combine paprika, cornmeal, thyme, salt, celery seed,
garlic powder, onion powder and pepper. Wet the catfish fillets in milk, place
them into cornmeal mixture and coat them liberally. Arrange on a greased
baking sheet. Wet the tops of the fillets with cooking spray.
• Place and bake in the preheated oven for 15 minutes or until fish is easily
flaked with a fork.
