Queso Catfish

« Crispy and spicy way to serve catfish. »

• 4 (6 oz.) fillets catfish
• 1/4 cup lime juice
• 1/2 cup cheap beer
• 1/4 cup yellow cornmeal
• 1 cup finely crushed tortilla chips
• 1/2 tsp. salt
• 1/4 tsp. cayenne pepper
• 2 tbsps. lime juice
• 2 tbsps. canola oil
• 4 oz. processed cheese, cubed
• 1 tsp. chili powder
• 1 tsp. ground cumin
• 1/2 chipotle pepper, minced
• 2 tbsps. chopped fresh cilantro (optional)


• Mix beer and quarter cup lime juice in a shallow dish. Put fish in the dish,
and flip to coat. Let sit to marinate for half an hour.
• Preheat oven to 200°C or 400°F. Put cooking spray on a roasting rack, and
put on top of a baking sheet.
• With cold water rinse fish, then pat dry. Get rid of the marinade. Mix
pepper, salt, tortilla chip crumbs, and cornmeal together in a dish. Mix canola
oil and 2 tbsps. of lime juice in a separate dish. Dunk fillets into the oil and
lime, and into the cornmeal mixture to coat. Onto the roasting rack, put the
• Bake till fish can easily flakes with a fork for 8 to 10 minutes. Meanwhile,
in a small saucepan on medium-low heat mix the chipotle pepper, cumin,
chili powder and processed cheese. Cook and mix till smooth and melted.
• Put fish on serving platter, and ladle cheese sauce on top. If you wished, put
cilantro leaves on top.
