Quick Catfish Fillets

• 1/3 cup all-purpose flour
• 1 pinch salt and pepper to taste
• 4 (6 oz.) fillets catfish
• 2 tbsps. olive oil
• 1/4 cup oyster sauce


• Combine together pepper, salt and flour in a bowl. Dip into the flour
mixture with fillets of catfish to coat them slightly.
• In a big skillet, heat olive oil on moderately high heat, then cook catfish
fillets until turn golden brown, about 3 minutes per side. Lower heat to
moderately low and use oyster sauce to brush over fillets. Place a cover on
skillet and keep on cooking about 5 minutes, until it is easy to flake fish with
a fork.
