Kid-Friendly Catfish Sticks

• 1 lb. catfish fillets, cut into 1 1/2×4-inch sticks
• 1 cup Italian salad dressing
• 1 1/2 cups all-purpose flour
• 1/2 cup cornmeal
• 2 tsps. paprika
• 2 tsps. garlic powder
• 2 tsps. lemon-pepper seasoning
• 1 tsp. ground black pepper
• 4 eggs, beaten
• 2 cups oil for frying, or as needed
• 2 tsps. salt


• Put fish in bowl. Add Italian dressing; marinate for 30-60 minutes in the
• Heat oil in big saucepan/deep fryer.
• Mix pepper, lemon-pepper seasoning, garlic powder, paprika, cornmeal and
flour in resealable bag. Put beaten eggs in another resealable bag.
• Take catfish from marinade; shake excess off. Discard leftover marinade.
Drop catfish in bag with eggs; shake to coat. Take catfish form eggs with
tongs, a few at a time, then put into flour mixture; shake to cover.
• Cook catfish in hot oil in batches for 5-7 minutes till fish are cooked
through and float to top. Use tongs or slotted spoon to remove cooked fish;
drain on paper towel. Use salt to season fish sticks while warm.
