Lemon Pepper Catfish

Ingredients:

• 1 1/2 cups all-purpose flour
• 1/2 cup cornmeal
• 1 tbsp. lemon pepper
• 4 eggs
• 6 (6 oz.) fillets catfish
• 1/4 cup margarine

Direction:

• Mix together lemon pepper spice, cornmeal and flour then put aside. Beat
eggs lightly in another bowl.
• Melt margarine in a big frying pan on medium-high heat.
• Dip one fillet at a time into beaten egg and coat with flour until well-coated.
Cook in the hot margarine until both sides turn brown, turning one time.
Transfer onto paper towels to drain briefly and serve.
